Don't normally like raw cauliflower, but this recipe is the best! I especially like it cold the next day - I swear it tastes just like potato salad. Definitely on my menu for the 4th!

Russel Jame's Raw Vegan "Cheesy Cauliflower
Ingredients

* 1 1/2 cups Raw Cashews
* 2 tsp Rosemary, Fresh
* 2 tbsp Extra Virgin Olive Oil
* 2 tsp Lemon Juice Raw
* 6 tbsp Pure Coconut Water
* 3 tbsp All Natural Nutritional Yeast Flakes
* 1/2 tsp Pure Pink Himalayan Sea Salt
* 1/4 tsp Organic Ground Cayenne Red Pepper
* 1/4 tsp Ground Turmeric
* 2 tbsp Onions, Green, Raw
* 2 tbsp Chives
* 4 cups Cauliflower, Raw
* 1 tbsp Lemon Juice Raw
* 1 tbsp Extra Virgin Olive Oil
* 1/2 tsp Pure Pink Himalayan Sea Salt
* 1/4 tsp Ground Turmeric

Directions

- Blend the first nine ingredients (exclude onions and chives) in a high-speed blender until smooth.

- Stir in onions and chives by hand.

For the cauliflower ingredients:

- Mix all ingredients in a bowl, massage in by hand and leave to marinate for 10 minutes

To assemble

1 tablespoon chopped fresh chives

- Mix the cheese sauce and cauliflower together and serve in individual portions in small bowls. The bowls can be placed in a dehydrator 1 to 2 hours before serving to warm through.

Thanks! I tend to not like raw cauliflower as well. Nice to have a recipe that may get me to eat it.

Thanks Rev, let me know how it turns out. In lieu of chives, I always use green onions and also add paprika. Gc love it!
