These are probably the BEST raw pancakes EVER and, they're easy to make!

3/4 C. fresh blueberries
2 ripe bananas
2 C. pecans, soaked 8-12 hours
2 C. pine nuts
1 C. water
1/2 C. agave
1 vanilla bean, scraped
1 tsp. salt

Separate ~ 2 C. maple syrup, agave or honey (optional for topping)

Blend all ingredients except blueberries in a high speed blender until completely smooth. Put batter in a bowl and add blueberries. Mix well.

Spread batter in 4-5 inch rounds on Teflex sheets. Pancakes should not be more than 1/2" tall. Dehydrate 24-48 hours. Swerve warm with the syrup and Eggplant Bacon.

The bacon is wonderful too!

OK this is not about blueberry pancakes but it has blueberries in it and I didn't want to start a new thread. We had blueberries, raspberries and blackberries for dessert tonight and they were so sweet that my family would not believe I did not put sugar in them. As if I would Mmmm mmmmgood
