This seems appropriate for this time of year ~

Serves 4-6

2 parsnips
1 rutabaga diced
3 garnet yams peeled and diced
2 beets diced
2 Fuji apples diced
12-20 cloves of garlic (depending on how much you like garlic)
1/3 C water
1 C. green olives of your choice (pitted)
1/3 C. olive oil
1 tsp. Italian seasoning

Put olives, oil, water and seasoning in a casserole pot and add first six ingredients. Toss. Cover and bake in a 375 degree oven until everything is soft.
